According to Kristie Ebi, a professor at the University of Washington’s Center for Health and the Global Environment, “The diets we eat today have less nutritional density than what our grandparents ate, even if we eat exactly the same thing.”
There are a few key topics that beg for attention by our Congress. One is the egregious behavior of the Trump administration. A second is related to claims that our younger generations have poorer preparation for the future and fewer opportunities than their parents and grandparents generation. A third concern is addressed by Dr. Ebi regarding the possibility that the nutritional value of American food production is declining.
We see no help from the Trump administration in rectifying the last two concerns. Therefore we call on you, the legislative branch to work diligently toward the future of our country.
Nutrition is paramount to the survival and flourishing of all life on earth. Please work hard to investigate the claims of Dr. Ebi and ensure that the nutritional level of food production is never compromised and that the US puts forth a larger effort to teach the rest of the world how to obtain good nutrition. It’s so important.
